About us

Encouraging “eating local” while promoting the sustainable use of the resources offered by the St. Lawrence and, above all, making you want to taste them: that’s the objective behind the “A Wave of Flavours” exhibition.

In a tour covering three themes, we hope to help you (re)discover 70 edible species found in the waters of the St. Lawrence, from their biology to being consumed, including their capture and their journey from the water to your plate.

As you explore, you will also meet some of the men and women who perpetuate the traditions and know-how associated with Quebec seafood. These people are captains, growers, hunters, processors, scientists, chefs, fishmongers, distributors and nutritionists. Their collaboration helped us build this exhibition. We thank them for sharing their knowledge, expertise and life stories.

With this content, we want to give you the keys to responsible consuming, while sparking your curiosity about lesser-known species on the market.

Perhaps, one day, they will become an integral part of Quebec’s culinary culture. History is in the making…
